Jaipur Literature Festival - 2014

Am happy and excited to attend this year's Jaipur Literature Festival which is going to be held from 17th - 21st Jan 2014. This is said to be World's Largest Free Literary event. This would be a first ever experience for me to see some great literary figures and listen to their talks.

Apart from attending few book launches I have never been to such a huge Literary event. Am still in the process of figuring out the authors and sessions to catch up at the event. Amartya Sen, Shashi Tharoor, Irrfan Khan, Javed Akhtar, Jhumpa Lahiri are definietely on my list as of now.

Eggless chocolate cake made in Pressure Cooker

Many of you might not know this, but yes a cake can be baked in a pressure cooker too, that too a fluffy and spongy one. After a couple of failed attempts I finally got it right today with this recipe. Made tasty and fluffy egg-less chocolate cake in a normal pressure cooker. The cake looks exactly like the one made in oven or a microwave. You can make egg or egg-less cake, here is the egg-less version.

Ingredients:
All purpose flour (Maida) - 1 cup
Oil - 1/4th cup
Powdered Sugar - 3/4th cup
Water - Half cup
Cocoa powder - 2tbsp
Vanilla essence - 1/4th tbsp
Baking soda(cooking soda) - 1/4th tbsp
Baking powder - 1/2 tbsp
Lemon juice - 1 tbsp







Procedure:
1. Take a bowl and sieve together the dry ingredients -  all purpose flour, powdered sugar, cocoa powder, baking soda and baking powder.
2. In another mixing bowl, add oil and vanilla essence. Keep adding the sieved flour mix spoon by spoon and thoroughly mixing the contents, so that the mixture is incorporated well.
3. If the consistency becomes too thick keep adding a spoon of water.  The final consistency shouldn't be too thick or too thin.
4. In the meanwhile heat the empty pressure cooker on high for 5 minutes and grease the cake tin.(you can use the container which you use to make the rice in cooker)
5. Once the flour is added completely, put the lemon juice and mix well again. Pour the mixture to the greased cake tin.

6. Put an empty container (the container in which you keep daal in the pressure cooker or any other container) at the base and cake tin on top of that. Close the lid without weight (whistle) and without gasket.
7. Reduce the heat to low to medium for 30 minutes.
8. After 30 minutes, check whether the cake is done by inserting a toothpick or a clean knife. If they come out clean, the cake is done.
9. Switch it off and leave it for 5 minutes. Then remove and loosen the sides with the help of a knife. Invert it on a plate.Your delicious fluffy chocolate cake is ready.
